07 - 1 small cauliflower head, cut into florets

# Steps:

01 - Heat olive oil in a large heavy-bottomed pot over medium-high heat. Add beef cubes in batches and brown on all sides. Remove and set aside.
02 - In the same pot, add onion and celery. Sauté for 3-4 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
03 - Stir in tomato paste, then return beef to the pot. Add zucchini, cauliflower, and bell pepper. Pour in beef broth.
04 - Add thyme, oregano, bay leaf, smoked paprika, salt, and pepper. Stir to combine all ingredients evenly.
05 - Bring to a gentle boil, then reduce heat to low. Cover and simmer for 1 hour 15 minutes, stirring occasionally, until beef is tender and vegetables are cooked through.
