01 - 1.1 pounds skinless chicken breast or turkey breast, diced

11 - 1 teaspoon dried thyme
12 - 1 teaspoon dried rosemary

# Steps:

01 - Heat olive oil in a large soup pot over medium heat. Add diced onion and minced garlic; sauté for 2-3 minutes until fragrant and translucent.
02 - Add diced chicken or turkey breast to the pot. Season lightly with salt and pepper. Cook until just browned on all sides, approximately 5 minutes.
03 - Stir in sliced celery, carrots, cubed rutabaga or turnip, and cauliflower florets. Cook for 3-4 minutes, stirring occasionally to coat with rendered fat.
04 - Pour in low-sodium chicken or vegetable broth. Add dried thyme, rosemary, and bay leaf. Bring mixture to a gentle boil.
05 - Reduce heat to low, cover pot, and simmer for 25-30 minutes. Cook until vegetables are tender when pierced with a fork and chicken is cooked through.
06 - Stir in chopped kale or spinach. Cook for an additional 3-4 minutes until greens are wilted and tender. Adjust seasoning with salt and pepper if needed.
07 - Remove and discard bay leaf. Ladle hot stew into serving bowls. Garnish with fresh chopped parsley and serve with lemon wedges if desired.
